Ms Yael Mejia has her own company Foodcraft Solutions – a complete concept design service to clients around the world. In Dubai Yael is Food Consultant to Baker & Spice - the place for foodies who appreciate quality. In February 2009 Baker & Spice restaurant and food retailer opened in Souk Al Bahar, overlooking Dubai Fountain in Downtown Dubai. In November 2010, Yael has overseen the configuration, construction and opening of a new kitchen and artisan bakery in Dukkan Al Manzil.
With 35 years experience in the food industry, Yael Mejia brings a wealth of food knowledge and experience garnered over the years in various parts of the world, including Europe, the Middle East and the Far East, designing food concepts for other entities, while running two high profile and successful operations in the UK and consultancy to Villandry Kitchen, a new French retail and bistro concept . She operates in an ethical framework and has been at the forefront of the food with integrity sector for the last 20 years.
Yael insists on buying food with integrity at source. She is passionate about taste and a great advocate for buying and eating locally grown fresh produce, raw ingredients with maximum consideration for environmental issues. Her first priority is to look at what is in season locally within the region, and in peak condition. Sourcing food this way means minimising food miles and carbon footprint, the journey from field to plate is significantly shorter and the food actually tastes better.
