Michael began his career in aviation with Sky Chefs in Boston in 1995.  After holding many positions within Sky Chefs, he later joined British Airways Catering in 1999. 

In March 2016, Michael joined Etihad Airways in New York and is now residing in Abu Dhabi as Manager of Catering Operations.  He is responsible for leading the Culinary Standards and Catering Performance Management team responsible for Etihad hub catering operations at Abu Dhabi and outstation catering.

Gulf Aviation based in Bahrain from 1971 - 1972 as a Trainee Assistant Catering Manager, British Caledonian (BCAL) from 1973 to 1988, as Regional Catering Representative / later Manager for UK, Europe, USA, Middle East and Far East.

Mark started his career working as a Chef for the London Intercontinental Hotel, then moved onto other prestigious Hotels and restaurants in London and Luxembourg. In 1988, Mark joined British Airways in London and ended up as a Business Controller in charge of Food Production at the BA catering facility.

Stephanie Taylor

Stephanie began her career in aviation with HMG Aerospace in 2014, working as an editorial assistant across its Inflight and LARA magazine portfolios. Stephanie left HMG Aerospace to go freelance.

During this time, she worked for a PR company representing clients such as Paula Kraft & Derek Freeman. She also wrote for other aviation trade publications from Aircraft Cabin Management to Aircraft Interiors International & Business Travel Magazine. It was during this time she began working regularly with APEX Media.

In May 2018, Stephanie joined the APEX Media team full-time in London. Amongst other responsibilities, her role is to oversee the bi-annual creation of the Higher Hospitality booklet, which explores trends across the in-flight services industry. As part of this, Stephanie is fostering relationships with IFSA and its members.
